Scratch made Bacon has been the topic of many reviews on Tripadvisor and Face Book.  Afterall, we are a Bed and Breakfast and you better have a comfy bed and awesome mouth watering delicious breakfast when those words are in the businesses name.  You wouldn’t go to a burger joint and expect to order prime rib steak.  In the two years that we have owned Fox Hill B&B, we have developed quite a reputation with our breakfasts.  We cure our own bacon at Fox Hill! Staying more than one night guarantees that you will get BACON in one of your breakfasts. At Fox Hill, we make our breakfasts from scratch, whether its blueberry pancakes or butterscotch muffins, we get up early and start the fixin’ the treats to start your special.

Decadent Candy for Breakfast?

It’s like eating candy for breakfast. The little kid in all of us wants to break the rules when on holiday. So, we usually add a serving of fresh fruit with the candy. Back to the subject of Fox Hill’s homemade bacon.  Unlike store bought bacon, we start with a locally sourced pork belly. Then we cure the bacon using a combination of brown sugar, pure maple syrup, salt, cracked pepper, coarse pepper, Jim Beam bourbon and time. Time is the key. Rushing the curing or the smoking process will not produce the required and repeatable results.  About two weeks in a curing bag it’s ready to smoke. We fire up the smoker and shoot for the optimal temperature we like.  We smoke the bacon for 5-6 hours with an Applewood, lump charcoal and constant, consistent temperature.  Then it’s back in the chill box for another week. We slice it  on a commercial slicer and freeze it for our guests to enjoy.

Mike and Cathy’s Story – As told by Cathy

They say life is a journey, and it certainly is. But you never know what kinds of twists it will take until you happen to travel through the beautiful Shenandoah Valley. That’s exactly what happened to us. While admiring the area’s incredible beauty on a trip through the Valley, I turned to Mike and said, “It’s so beautiful, why don’t we live here?” The seeds for a new life were sewn.

Thirty-six months later, with a business plan in hand we purchased the 38-acre countryside property. Running a bed and breakfast seemed like a perfect fit for our combined skills. We wanted to run a hospitality business that would make people feel welcomed and relaxed– a place where they could share in the beauty of the Shenandoah Valley – all within a casual, comfortable, home-away-from-home atmosphere.

Cathy’s life in Human Resources Management

I refined my people skills with a resume that includes over twenty years in the Human Resources Management field. With an Associate’s Degree in Business and a Bachelor’s Degree in Human Resource Management, this combination assures our business is not only well run, but with a professional focus on customer service and guest experience. After I left the corporate world, I established and operated a pet sitting and dog walking service. With a flair for sales and marketing, the business flourished and my love of dogs followed us to Fox Hill. How could we not be a dog friendly bed and breakfast?

Early Retirement from Information Technology

Mike is an early retiree from the Federal Government in Information Technology Security. He also ran his own business as an IT professional, which makes him the guru of technology services here. As Fox Hill’s handyman, Mike applies his apprenticeship program skills bringing proficient electrical, plumbing and carpentry skills to the work required to keep the place running smoothly. But his real passion is by far cooking. Mike has been cooking since he was 10 years old, and his love of food and cooking has prompted him to take various cooking classes. His talents are on full display at Fox Hill. In fact, he learned BBQ smoker techniques from an award-winning BBQ pit master. These skills, and a few of his own special secrets, make his homemade Bourbon Maple Cracked Pepper Apple-wood Smoked Bacon and seasoned Breakfast Sausages huge favorites with guests, who delight in this labor of love.

We purchased the Inn in December 2015. That first winter, we were snowed in for two days. In spite of the cold and snow, excitement for this new journey and a passion for creating a wonderful guest environment came to life at the Inn. The seeds of this new life have flourished ever since. No regrets.

Visiting the Sleepy little town of Fairfield VA

PastureNestled in the Shenandoah Valley is the sleepy little town of Fairfield VA. There are a few small shops in the center of town, a post office, a couple of auto repair shops. You’ll find many dairy farms (cow, sheep and goat) providing local cheeses to many of the businesses close by. It is also home to the Lexington Carriage Co (horse drawn carriage rides) and the beautiful dog friendly country Fox Hill Bed and Breakfast that cures its own bacon and makes its own sausage.

Just twelve miles north of Lexington (VMI, W&L, and Lexington Horse Center etc.) and twenty miles south of Staunton, Fairfield VA is a throwback to simpler times. If you are looking for GOD’s country, look no further than Fairfield VA. You can also buy fresh cheeses in this town from a local farm. There are also a few vineyards close by as well as a brewery. There are many interesting places to hike, bike, swim and fish and the people are super friendly. Google Fairfield VA and visit this peaceful little community, you’ll be glad you did.

A place to Remember

Beautiful Bed and Breakfast with mountain views

“Beautiful Bed and Breakfast with mountain views” The Fox Hill Bed & Breakfast Suites is really top-notch in every way. Our suite (Cornwall) was immaculate and very spacious and had all the amenities we needed. Cathy and Mike served delicious and innovative breakfasts each morning. We enjoyed checking out beautiful Natural Bridge, a local brewery and antique store in the area. We were rested and re-charged thanks to Mike and Cathy’s beautiful accommodations. We will visit again!

Our first B&B experience

Our first B&B experience was exceptional! Our first B&B experience was made exceptional because of Cathy and Mike at Fox Hill B&B in Fairfield Va. The house in its country setting was beautiful and the surrounding views were spectacular. We were greeted with warmth and kindness in a very comfortable and inviting atmosphere. The breakfasts served were delicious, homemade baked goods and main courses prepared from garden to table. We absolutely would return and we highly recommend their inn and hospitality.

Delightful

Delightful B&B in the Shenandoah Beautiful, spacious and comfortable room. Setting has beautiful views, yummy breakfast and delightful Inn Keepers. Cathy and Michael were great – we want to come back and enjoy all that the area has to offer.

Peaceful

Peaceful Perfection! What a wonderful treat we found in the Fox Hill Bed & Breakfast suites! The sad part is that we only had one night here. We had the Fairfield Suite, which was lovely, with a king size sleigh bed. The bathroom is large with a jucuzzi tub and a shower. The owners attention to detail is excellent. With me, the little things count a lot. And every where you turned you found something special & extra. It sits on 28 acres of beautiful land with a horse & donkey to visit; trails to walk; and a little water feature. They have their own bee hives, so fresh honey in the morning. Breakfast was delicious! Micheal & Cathy, the Inn Keepers are great. They are so personable and helpful. They obviously love what they are doing!  We Will Be Back!

Superb

Superb all the way around! Beautiful setting, warm and gracious hosts, spacious and comfortable room… and my furry companion was welcome! We both enjoyed strolls through the fields along the paths, breathing deeply of the clean fresh air! Breakfast was delicious and generous! The experience was superb all the way around! I will definitely consider another stay if I’m traveling through the area again!!

VA Horse Center

THIS is the ONLY place to stay when in the Fairfield area!We stayed at Fox Hill in April for the IEA Nationals at the Virginia Horse Center. My husband, daughter and I traveled with our trainer as well as another mother and daughter. Cathy and Mike have created a five star experience for their guests at Fox Hill! The breakfasts – proudly cooked by Mike – are by far the finest we have had at any B+B. We are still talking about the breakfasts months later! The grounds are beautiful, the rooms are spacious and immaculate, and Cathy and Mike are the most gracious and accommodating innkeepers we have ever met. We were sad to leave and can only hope another horse show or other event brings us back to the area so we can stay at their lovely inn!

Idyllic

Idyllic place in spectacular pastoral location We had a graduation ceremony at a nearby university in lexington with family of various ages and a pet to boot. Cathy and Mike made our stay so enjoyable and made the graduation celebration that much better. It was close enough to get to easily but far enough away to be very restful after the crowded ceremony. The food was amazing and so thoughtfully prepared to accommodate everyone’s restrictions. It was truly like staying at an oasis.

The Best

One of the best Spent New Years Eve in the most quiet and wonderful B&B. Just off I-81 in Fairfield, the inn is a collection of suites and rooms that are rustic, clean and well appointed. The inn is also pet friendly. The inn keepers, Cathy and Mike, are wonderful and incredibly friendly people. Every morning they serve an outstanding gourmet breakfast, one of the best I’ve ever had. Next time I’m in the Fairfield/Lexington area, I will always stay at the Fox Hill B&B.
